Trellised, single irrigation per annum, heavy ‘vendange Verte’ for low crop, and uniform ripeness early in season.
IN THE CELLAR
Harvesting at optimum ripeness, and then the fermentation is in open-top fermentation tanks. Fermented with a selected yeast culture at 28°C. Punching down and pump over three times daily. Pressed early with little skin contact after fermentation.
