Good colour, nose shows cherry fruit with mocha/dark chocolate flavours, well integrated silky tannin, palate is mouth filling, surprisingly complex for such a young wine.

Grape Variety     96% Shiraz, 4% Viognier

Region Barossa Valley

Oak Maturation                A selection of new and second use French and American oak hogsheads.

Typical Analysis 14.5% Alc/vol, 3.40 pH, 6.54g/L TA

Optimal Drinking               A great wine to consume now but will benefit greatly from several years maturation.

Colour   Deep, garnet red

Bouquet               A chorus of sweet, sensual sandalwood, nectarine and roasted almond, over a refrain of turmeric, praline and coffee

Palate    Textured, powdery tannins and dark chocolate beneath a pastiche of coffee, apricot and liquorice

Viticulture           Fair Winter rains and a strong, regular growing season. Harvested in early March at optimum maturity.

Winemaking       Fruit was gently destemmed before undergoing a cool, temperature controlled fermentation. Twice daily pumpovers were performed to optimise flavour extraction. After 7-10 days in open fermenters the wine was gently pressed to barrels for maturation

Storage/Maturation        20 months in seasoned French and American Hogsheads

Food Matches    Rock salt encrusted, rare roast beef with sauteed garlic and parsley potatoes
