Tasting Note

Fresh raspberry and strawberry aromas with a hint of oak and subtle earthy tones, whilst the palate is appealing and bright with fresh berry flavours and lovely concentration. Supple tannins and wonderful depth provide balance and structure.

Vineyards and Viticulture

50% of the grapes were from the Chaytors Road vineyard with the balance from the Waihopai, Omaka and Awatere valleys. This wine is a mix of clones 5,15, 114, 117 and 10/5 on a variety of soils from free-draining silt loams to more clay influenced gravels. 2016 was another lovely vintage where harvest of this Pinot Noir was completed in perfect condition, at prefect ripeness and with plenty of flavour.

Winemaking

The grapes were harvested into open top fermenters for cold maceration to help extract colour and flavour prior to fermentation. Fermentation started spontaneously (wild) and the fermenters were hand-plunged three times a day. The wine was left on skins for seven days post ferment before pressing to predominantly old French oak barriques. It was then blended after ten months maturation in barrel.

Cellaring

Two to four years.

Food Pairing

Enjoy in moderation with lighter red meats, hot ham or if you like red wine with fish, try it with salmon or a yellow fin tuna steak.
