Full and complex. Vibrant red fruit and cassis from the Cabernet Sauvignon combine with Merlots plum and vanilla undertones and hints of Cabernet Francs tobacco leaf and bell pepper. Ex-plosive and evolving aromas of ripe black berries, leather and pencil shavings are followed by hints of cedar wood and cassis. The palate is brimming with dark fruit and peppermint choco-late, alongside of soft tannins and a velvety finish. A wine of great pedigree that will reward cellaring. Johnnie Calitz (winemaker)
In the Vineyard
We believe great wines are born from the understanding of plant, soil and climate within a specific site, together with the creative art of winemaking and blending. Grapes for this wine were all sourced from Glen Carlous Simonsberg vineyards. The trellised vineyards, grown on predominantly Oakleaf soils are meticulously farmed for low yields.
The Cellar work
Gentle handling and absolute attention throughout the wine-making process ensured the wine was kept as natural as possible. Distinct blackcurrant and liquorice, with characteristic bell pepper notes mingle with chocolate and sweet berry flavours. The components were fermented naturally in small open top barrels and left on skins for 30 days. Only free-draining juice went into French Oak barriques, matured for 22 months.
