Sauvignon Blanc 2008 Marlborough
Our Wairau Valley vineyard is a well established vineyard while the Awatere Valley vineyard is a newly established vineyard from where the fruit was hand harvested. The Wairau Valley fruit was machine harvested, juiced and cold-settled.
The hand harvested fruit was sorted and then whole-bunch pressed to minimize skin contact. Following 48 hours cold settling, the juice was racked to tank for fermentation. Juice from both vineyards was kept separate throughout. Both tanks were inoculated with classic SB yeast strains (VL3 and QA23) and then fermented cool at 12° – 13° C until dry. Both wines then remained on full yeast lees for a further three months before being racked for cold/heat stabilization. The wines were then blended, filtered (but not fined) and bottled under Diam cork.
Classic yet understated Marlborough Sauvignon. A dry wine with pungent aromas of cut grass, snow pea and passion fruit backed by added texture and complexity from lees ageing. Superbly balanced with a palate of classic, herbaceous and citrus fruit complementing the wines backbone of vibrant and lively acidity. Characteristically long and crisp finish.
