The fruit for this wine was hand harvested from our West Melton (May 1st & 2nd) and our Burnham (May 8th & 9th) vineyards. The fruit quality was ideal with minimal botrytis and clean fresh flavours. Average yield was 25 hl/ha. Each vinyeard was handled seperately. Fruit was split into two batches - one batch being whole-bunch pressed and the other crushed and destemmed prior to pressing. Following a cold settling period of 48 hours, the juice was fermented in a number of tanks with various aromatic yeast strains and varying fermentation temperature controls - all designed to contribute an element of complexity to the final blend. Post ferment, the wine was racked onto light lees and matured for six months before being stabilised, filtered and bottled under cork in December.
The wine is off-dry in style with aromas of citrus and white peach. The residual sugar is well balanced with fine natural acidity running through the palate and aiding the lenghty finish of the wine Mid palate weight has been enhanced by the use of lees ageing to increase the mouth feel. Hints of minerality gained from the old riverbed soils of the vineyard, contribute to the wine's complexity. Should benefit from mid to long term ageing where classic secondary Riesling characters will evolve.
